Cream-less Creamy Corn Pasta, Perfect Tomato Soup, Shrimp Packets: What I’m Cooking This Week

What I’m Cooking” is back, friends! The last few weeks, I was trying out one of those boxed meal kit subscriptions (Green Chef) and while everything was pretty tasty and I liked having less food waste, it’s annoying to break down all that cardboard (at one point, there were four very large boxes just stacked in my kitchen), and I was spending more money than I should on the subscription plus what I’d spend at the grocery store to round out my week of meals. So, I paused it for now, and I’m back to simple weeknight recipes.
This week, I pulled from me repertoire of go-tos, but am also trying two new recipes. I’ll be sure to report back on whether they’re any good, but they sure do look tasty. Let’s take a look:
Chopped Thai Salad via What’s Gaby Cooking
I watched Gaby make this on an Instagram live earlier this week and my mouth has been watering ever since. She make it in about 20 minutes with a baby strapped to her frontside, so I figured it was just right for a weeknight when I barely have the will to step foot into the kitchen. This recipe is fully vegetarian, but I’ll round this out for Charles and myself with some grilled chicken I cook in the air fryer and shred up. I’m also using peanuts instead of cashews because that’s what I have on hand and skipping the shelled edamame because they didn’t have any at my grocery store and I’m 100% not shelling my own edamame on a random Tuesday night.
Creamy Corn Pasta with Basil via The New York Times
This is another new one and wawaweewa that looks yummy. Sweet corn is probably one of my top 10 foods, basil makes everything better, and short stubby little rigatoni holds sauce so well. I haven’t made this one myself yet, but I can’t imagine it’s a dud…let’s hope I’m right.
Shrimp Foil Packets via Delish
Ahh, an old faithful. Figured I’d whip up some shrimp packets as the pasta recipe only calls for two ears of corn, and the pack I buy normally comes with four (no loose corn on the cob at my grocery store during COVID sadly). This meal is sure to guarantee a very delighted and enthusiastic “YES!” from Charles…and me. It’s great, and I’ve sad so on this blog probably about four times already.
Classic Tomato Soup via Cup of Jo
I first shared my love for this soup in this post…about my love of soup. But I stumbled upon a saved photo of tomato soup on my phone today and immediately added this to my list. Plus, it’s supposed to be chilly on Tuesday night, so I think this will be just perfect! I level this up by taking a baguette and turning it into oven-crisped croutons for the top. Mmm mmm, can’t wait!
And that’s it. Wednesday is take-out night in honor of lillordag around here, and Friday is also typically a take-out night, so four recipes is just enough for our week including Sunday night. Anyone else have a great recipe they’ve tried recently they want to share?
