Vinegar Chicken, Acai Bowls, Potato Leek Soup: What to Cook This Week
Project 365, Day 52
Happy Sunday friends. Last week was a doozy in terms of how busy I was with day-job stuff and personal project stuff. I got through cooking begrudgingly, but this week should be much friendlier to me (I hope). There are some things here I’m really excited to try that I’ve never made before. What are you cooking up this week?
Monday: Pan Seared Salmon w/ Mustard Dill Cream Sauce (Whole 30)
I’ve shared Ronny’s recipes before from his blog Primal Gourmet and they’re always easy and really great. To offset all the chickpea cookie dough I’ve been eating, I figured let’s go ahead and start the week off with some health, hm? I’ve never made this, so I can’t recommend it beyond reading the ingredients and being confident it’ll all come together yummy. Not sure how much the coconut flavor will come through the coconut milk used (this is all non-dairy), but I’m curious enough to give it a try. Planning on serving with some steamed or roasted asparagus.
Tuesday: Chicken with Vinegar and Onions (Poulet au Vinaigre)
One day without carbs (Monday) will certainly leave me wanting some come Tuesday and I’m VERY excited for this recipe. I have some chicken drumsticks and thighs in the freezer I want to use and have been meaning to try my hand at some poulet au vinaigre. I tend to prefer flavors that smack you across the face to more subtle things, and I think this will come together and do just that. Going to serve over some egg noodles, which I haven’t made in eons, and haricots verts because it’s French, after all. Mais oui!
Wednesday: NOTHING! It’s Lillördag.
This will be the third week doing Lillördag, which for us so far, means take out and a movie.
Thursday: Potato Leek Soup w/ Crusty Bread
I’ve been craving potato soup and then I remembered this lightened up version I made years ago from Skinnytaste which was delicious and satisfying. My go-to super market has take and bake baguettes from La Brea Bakery (a famous bakery here in LA), which are the perfect companion to the creamy, comforting soup.
Friday: Take Out
For about five minutes, I thought I’d just make my own pizza dough for Friday but decided to cut myself some slack and just do take out instead.
Saturday: Perfect Pot Roast
Another recipe I haven’t made before but the reviews are great and my mom always raves about the Pioneer Woman’s recipes. Again, this recipe is an answer to having a chuck roast in my freezer that I need to use up and I know Charles will LOVE this.
Breakfast: Açai Bowl
When I’m not eating scrambled eggs with a side of berries for breakfast, I either like to do overnight oats, chia seed pudding with fruit or, as of late, an açai bowl. I bought the frozen packs of pureed açai at the supermarket, sprinkle in some vile-tasting green powder that doesn’t taste so vile when mixed with other things, add fruit, etc. and it keeps me full until lunch.
