Buffalo Chicken Sweet Potatoes, Carne Guisada: What to Cook This Week

If you popped over here yesterday looking for some recipe ideas, I probably disappointed you. But fear not, I hope you’re back today, because I’ve got a few to share with you. I’m hitting that point in the summer where I can tell I’m just going to want cold, no-cook foods but I’m easing my way in. Things that take no more than five minutes to toss together. This week is not that, but it’s brewing. Maybe next week. If you’re already there, I shared a post a while back about the no-cook recipes I like when I can’t bear to turn on the stove.

You’ll notice there are only four recipes, and that’s because literally anytime I buy enough food for five days of cooking, something comes up. I either get tired, lazy, have another impromptu dinner, or just have more food left over than anticipated that needs to be eaten and something slide into next week. That said, here’s what I have on my own meal plan for this week:

Open-Faced Tomato Sandwiches with Creamy Cucumber Spread via MyRecipes

Years ago, when I still lived with my parents in Orlando, I would occasionally visit the farmers market in Winter Park with my friend Tina. One of those Sundays, we both stopped by this bagel booth and brought home one of the best sandwiches I’ve ever eaten. I thought about that sandwich the other day, and wanted to recreate it. I pulled the above recipe to link to something and to have a photo (and also, it looks DELICIOUS), but this was the gist of the sandwich: pumpernickel bagel, scallion cream cheese, fresh summer tomatoes, English cucumber, flaky salt and pepper. So simple, but it was so…wow.

Detox Lentil Soup via Pinch of Yum

Look, you all know how much I love a lentil soup. Charles would say “why don’t you just use the same recipe every time?” and Charles…you just don’t understand me, sir. I like to change it up. But this version is very delicious with the addition of butternut squash and kale, though certainly flexible to whatever you have. I’m going to try to hunt down some gluten-free rolls, if anyone has a good brand recommendation?

Carne Guisada via Skinnytaste

Carne guisada, if you don’t know, is a Latin beef stew. Well…it’s not really “stew” per se, but it’s stewy delicious meat. I’m trying to only eat red meat every so often, only when I’m really craving it, not by default, and I thought of this meal the other day when we ordered Indian food for lillordag and Charles’ chicken vindaloo came with these wonderful stewed potatoes. I’m going to attempt to eat this over cauliflower rice to limit my grains this week, but yeah…it’s much better over white rice.

Buffalo Chicken Stuffed Sweet Potato via Not Enough Cinnamon

I’ve been making a version of these since the first Whole30 I did and since, I kind of just wing it. But figured I should share a recipe to make your life easier. I prefer ranch (or dairy-free ranch) over it rather than blue cheese, but it’s just so warm, complex, layered and delicious.

And that’s it! Like I mentioned at the start of the post, I’ll fill the rest of the days with leftovers, recipes that spill over, or some impromptu meals I either slap together (hi tuna sandwich) or order in.
