Ideas For What to Cook This Week (or Bookmark For Another Time)

I’m not a food blogger (though I do leave room in my head and heart for imaging what that would be like…one day?), but I do these types of articles because any human who has to cook for themselves or others in their household is typically met with the dreaded “what on earth do I make this week/tonight” thought on the occasion. For some, that occasion comes every day or every week. Usually, I try to share recipes that I’ve made before so I can vouch for them—like this week—but other times, I’ll include things I’m trying new myself.

These here, I’ve made time and again, so I feel confident recommending them to you. Give them a whirl if you need something new to add to your repertoire this week, or bookmark them/Pin them for another time. Bon appétit!

Easy Chana Masala via Minimalist Baker

For someone who doesn’t really love chickpeas outside of in the occasional salad or whipped into healthy cookie dough submission, I surprise myself with how much I enjoy this chana masala. It comes together really easily, and paired with rice and/or naan and a healthy extra squeeze of lemons, it’s really just hearty and delicious. I go very light on the peppers as it can get super spicy, super fast and well, my intestines were not built to handle that sort of thing.

Orzo Salad with Balsamic Grilled Chicken via Foodness Gracious

Man is this good. If you don’t have a grill (I don’t, either), I just make the chicken and the other components either in the oven or on my grill pan inside on the stove and it turns out just fine. It does take a little effort to prep and put all the pieces together, but wow is it worth it. It’s a perfect “weekend with friends outside on the porch” lunch or early dinner (you know, when we can start doing that again). Or, a “weeknight on the sofa watching TV with myself or my partner” good, too. The candied nuts are kind of clutch for the salty-sweet flavor profile, but if you’re watching your sugars, standard nuts would be delicious, too.

Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice via Cooking Classy

Wow is this coconut rice unbelievably yummy. This whole meal tastes like I’m on a tropical island, which is a very necessary mental getaway for someone whose DNA is from a tropical island but hasn’t actually been on a tropical island in quite some time. If you don’t love salmon, this would be equally enjoyable with chicken or even something like shrimp or scallops…or both!

Ground Turkey Sweet Potato Skillet Recipe via Primavera Kitchen

My dear friend Tara turned me on to this warm and filling recipe. I love a meal that comes together in one pot for numerous reasons: first, it’s less to clean obviously, but there’s nothing quite like something that mushes together in a single bowl that came out of a single pan. It’s essentially a hug in a meal. Plus, it keeps well in the fridge for a few days, and freezes even better.

Chicken and White Bean Enchiladas with Creamy Salsa Verde via Skinnytaste

I’ve been making these for years and years. I have an enchiladas recipe I concocted back in college that’s far more traditionally Mexican with a homemade tomatillo salsa and corn tortillas. But when I don’t feel like spending three hours putting together dinner, I usually pull this one out and whip it up. It doesn’t really need the beans if you don’t like beans, but it’s really satisfying and incredibly easy (especially if you use a rotisserie chicken).
